My daughter who's living US sent me this recipe. Recently, as a family we are trying to bake with whole wheat flour more. This is a great healthy cake that can be as an appetizer or a snack.
Ingredients
3 eggs
1 cup olive oil
1 cup yogurt
2 cups whole wheat flour
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 cup packed chopped dill
1/2 cup packed chopped plain parsley
3 scallion
200 gr. feta
Cumin seeds and sesame
Directions
Beat the eggs well with a mixer until they become light yellow and fluffy. Add oil and yogurt and mix. Add flours and baking powder-mix. Add dill, parsley, scallions (optional) and feta. Fold with a spatula and pour into a 9x13 pan. Sprinkle some cumin seeds and sesame on top. Bake for 30 mins or until golden brown on the sides and top. Serve warm.
